Skillet Chicken Cordon Bleu with Creamy Dijon Sauce



In Skillet Chicken Cordon Bleu, soft chicken breasts are stuffed with ham and Swiss cheese and then covered in a creamy Dijon sauce. This is a delicious take on the classic recipe. This dish is great for a fancy dinner or when you want to show off to guests!

Ingredients:

  • 4 boneless skinless chicken breasts
  • Salt and freshly ground black pepper
  • 8 slices deli ham
  • 4 slices Swiss cheese
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 2 tbsp Dijon mustard
  • 1 tbsp honey
  • 1 tbsp chopped fresh parsley optional, for garnish

Instructions:

Preheat your oven to 375F 190C

Place each chicken breast between two sheets of parchment paper or plastic wrap and pound to an even thickness, about 1/2-inch thick

Season both sides of the chicken with salt and pepper

Lay 2 slices of ham and 1 slice of Swiss cheese on each chicken breast

Roll up the chicken, enclosing the filling, and secure with toothpicks

In a large oven-safe skillet, heat olive oil over medium-high heat

Add chicken rolls to the skillet and cook until golden brown on all sides, about 2-3 minutes per side

Transfer skillet to the preheated oven and bake for 20-25 minutes, or until chicken is cooked through

Remove chicken from skillet and transfer to a plate, covering with foil to keep warm

In the same skillet, melt butter over medium heat

Whisk in flour and cook for 1 minute

Gradually whisk in chicken broth and heavy cream

Stir in Dijon mustard and honey, and cook until the sauce thickens, about 5 minutes

Season sauce with salt and pepper to taste

Remove toothpicks from chicken and serve drizzled with creamy Dijon sauce

Garnish with chopped parsley if desired
